On Old Town, Mad River, and others, the hull is made of a layered material called Royalex that has great memory. When these canoes get wrapped, they simply pop back out to their original shape.
As far as paddling the canoe solo, the proven way to do this is to "turn" the boat around bow to stern and sit in the bow (that has now become the stern) on (or in front of) the front seat. This puts you more toward the center of the canoe and makes it much more manageable.
