My experience with Utah fly fishing has been the Green below Flaming Gorge Dam, but it was pretty damn good, I must say. I've heard that up in the Wasatch Range, just east of Salt Lake City, there are some nice small streams with some pretty good fishing too. You're also a short five hour drive from the Henry's Fork area in Idaho, another hour on top of that to be on the Madison or in Yellowstone itself, and not too far from the Wind River Range in Wyoming, all places I've had some pretty epic angling experiences.
Don't worry too much about brew in SLC. The Great Basin Brewing is right in downtown and they make a more than decent selection of beers. I was there for a conference a few years back, and I recall a brew called "Polygamy Porter." I thought it was pretty funny, but when you see the six pack holder and the other slogans on it like: "why have just one?" and "bring some home to the wives" I must say that my estimation of the place went up a few notches. I know that the LDS folks don't own the brewery, but at least the people that run it know how to playfully satirize the dominant force in the land of Deseret.
Honestly, I can think of a LOT worse places to get a job. Howzabout USFS in downtown LA?
